I made this a couple of weeks ago when some friends came over for dinner and it was a hit with everyone, even the person who is not usually a fan of cheesecake! It’s really easy to make, and no baking required. Creamy and rich…mmm…it disappeared pretty fast!
I mostly got the recipe from the Nestle website verybestbaking.com here. (They used a bought pre-made biscuit base, so I had a look at a few other cheesecake recipes to decide on what to use here.)
Ingredients
400g chocolate digestive biscuits, crushed to fine crumbs (I used a food processor)
75g butter, melted
400g cream cheese, softened
200g chocolate, melted (I used 100g dark and 100g milk chocolate and melted it carefully in the microwave)
¾ cup light brown sugar
¼ cup caster sugar
2 tbsp milk
1 tsp vanilla extract
Method
- Mix the crushed biscuits and melted butter together well and tip into a 23cm springform tin. Using the back of a spoon, press the crumbs down really hard to make a flat and even surface. Put the base in the fridge while you make the filling.
- Beat the cream cheese, sugars, vanilla and milk together until well combined and smooth (about 2 mins with a mixer on high speed).
- Add the melted chocolate and beat again until well combined and smooth.
- Spoon the filling onto the base and smooth the surface with the back of a spoon or a palette knife.
- Chill for 1½ hours before serving. Run a knife around the edge before releasing the sides of the tin.
Tips
Serve this on its own, with whipped cream or a chocolate sauce.
Once the filling is set, you can top it with more melted chocolate (another 100g) if you like.
