Do you ever buy those sachets or pots of instant porridge (oatmeal)? It’s easy and cheap to make up the mix at home if you have a food processor. You can choose your serving size and what ingredients go into it!
In this recipe, you just add hot water, stir well and let it stand for a couple of minutes. You can use boiling water from the kettle, or if you have a coffee maker that uses pods, it’s even quicker to use that. I have a DeLonghi Nespresso machine and I press the ‘Lungo’ button without putting a coffee pod in, which dispenses 125ml (a ½ cup measure) of hot water into my mug of oats.
If you like to take a sachet of instant porridge with you to work, just measure servings of this mix into resealable snack/sandwich bags.
This recipe uses powdered milk so that you only have to add hot water when making it up. If that is not something you regularly have in the house, or you prefer to use a lactose-free or non-dairy milk, then leave it out. Mix your instant porridge mixture with the milk of your choice and microwave on full power for about 1½ minutes (depending on your microwave).

Ingredients
5 cups/500g Porridge oats (quick oats in Australia)
½ cup/60g Milk powder (optional)
1 tsp Salt
⅓-½ cup Soft brown sugar (optional)
Method
- Put 200g/2 cups of the oats into a food processor or blender and whizz until fine. Pour into a bowl.
- Add to the rest of the oats, the milk powder, salt and sugar (if using) and mix well. And that’s it! Store in an airtight container.
I use a ⅓ cup of the mix in a mug or bowl, add ½ a cup of boiling water and stir well. Allow to stand for a couple of minutes, stir again and enjoy!
Tips
Measure out a few portions into small resealable bags to save a bit of the work at breakfast time or to make it portable.
Add nuts, dried fruit, cinnamon… whatever you like in your porridge.
If you like it more or less thick, then adjust the amount of water accordingly.
If you are hungrier, use a ½ cup of the mix and add more hot water.
