This is a recipe I saw on Jamie Oliver’s FoodTube and it’s amazing – homemade pizza in 15 minutes, including making the dough from scratch and cooking time! This has been a last minute dinner rescue, a much-requested weekend lunch, and I usually make extra to put in their lunchboxes on Monday. I buy a bag of pre-grated mozzarella, divide it into Ziploc bags and freeze it. You can use it from frozen for this recipe, or take it out 15 minutes beforehand to thaw if you prefer.
Ingredients
1 1/2 cups self-raising flour (plus a little extra for rolling out dough)
1 tbsp olive oil
1/2 cup water
pinch salt
1/3 cup passata, leftover pasta sauce, bottled pizza sauce or barbeque sauce
1 cup grated mozzarella
toppings of your choice (ham, salami, vegetables, chilli flakes etc)
Method
- Turn your grill on to preheat. Put the flour, salt, oil and water into a food processor and whizz until the dough starts cleaning the sides of the bowl. If you don’t have a food processor, you can mix it up in a bowl with a fork and give it a brief knead by hand to bring it together.
- Get out your sauce and cheese, prepare your extra toppings and have them all ready next to your stove (this is going to be quick, so you need it all in reach!).
- Put a medium frying pan on the stove and preheat it on a high heat (no oil). Divide your ball of dough into two, dust the counter with a little extra flour and roll the first pizza base out – quite thin, about the size of your frying pan, as circular as you can.
- Pick up your pizza base and lay it in your hot frying pan, spoon half of your choice of pizza sauce over the base then add half of the cheese and your toppings. I like to put a light sprinkling of cheese on first, then the toppings, then more cheese – the toppings stay on the pizza better once it’s cooked!
- Once the pizza base has been in the pan for about a minute, turn off the heat, pick up the pan and slide it under the grill for another minute or two (leave the handle sticking out). Once the cheese is bubbling and golden brown, it’s ready! While it’s under the grill, you’ve got just enough time to roll out your second pizza base (but keep an eye on it). Put your cooked pizza on a board to rest while you cook your second. Resting the pizza for a minute or two helps the toppings stick.
If you prefer, you can cook the pizzas on a tray in the oven at 220°C for about 10 minutes depending on how crazy you’ve gone with your toppings.
