Quick San Choy Bow

This is a really quick, easy and tasty recipe for Chinese lettuce wraps. Dinner can be on the table in 15 minutes! I hadn’t heard of this when we lived in the UK, but it’s fast becoming one of the kids’ favourite dinners. 

San Choy Bow

Ingredients

1 tbsp oil
500g pork mince
1-2 cups of chopped vegetables (I use spring onions, carrot and mushrooms, but add what you like)
1-2 tsp grated ginger
1-2 tsp grated garlic
2 tbsp oyster sauce
1½ tbsp soy sauce
1 tsp sesame oil
1 tbsp sesame seeds
splash of water
1 iceberg or cos lettuce, separated into leaves (cut any massive ones in half)

Method

  1. Heat the oil in a large pan or wok and brown the pork mince, breaking it up as you stir.
  2. Add garlic, ginger and the vegetables, and stir fry until the vegetables are starting to soften.
  3. Add the rest of the ingredients (except the lettuce!), bring to the boil and it’s done!
  4. Serve with the lettuce cups and some cooked noodles.

Yum!

Tips

If you like it spicy, add some chopped fresh chilli when you add the vegetables or 1 tsp chilli flakes when you add the sauce ingredients.

If you’ve added the water and the sauce is a bit runny for you, thicken it up with a teaspoon or two of cornflour mixed with a little cold water.
