I grew up on Heinz Tomato Soup with cheese sandwiches, so it will always be special to me. Homemade soup is easy to make, tastes better and is much more nutritious than tinned soup, so of course I wanted to come up with my own version! This is mine and my daughter’s favourite soup at the moment.
Ingredients
1 tbsp oil or butter
1-2 onions, chopped
2 x 400g tin tomatoes
2 tbsp tomato paste
1 tbsp paprika
2 tsp dried thyme
500ml vegetable/chicken stock or water
2 tsp sugar
250ml milk or 60ml cream
salt and pepper
Method
- Sweat the onions gently in the oil or butter until soft, about 10 minutes.
- Add the thyme and paprika, stir, then add the tomato paste and stir for a few seconds.
- Add the tinned tomatoes, stock or water and sugar, bring to a simmer, then let it cook for 10 minutes.
- Whizz the soup in a blender or in the pan with an immersion blender, then put back on the heat, add the milk or cream and season to taste with salt and pepper.
Tips
This soup freezes well. I freeze it before I add the milk in 2-portion amounts in sandwich bags, then add a splash of milk when I’m reheating it.
I still think cheese sandwiches are the perfect accompaniment! Either cold or toasted…yum.
