Woah, it’s November already! In the hope that this might help any of you struggling to think what to cook this week, here’s the meal plan at my house. As I write it is mid-week, so we have already eaten the first 3 dinners.
This Week’s Dinners

Roast chicken, roast potatoes, vegetables and gravy
I made this on Sunday night. I bought the largest chicken in the shop so that I would have plenty of leftovers to use for 2 other dinners during the week.

Chilli con carne & spaghetti bolognese
The kids aren’t into chilli yet, but we wanted to try out the chillies we’ve grown in the garden, so I made bolognese for them. I started off making the base of both dishes in 1 pan with 1kg of minced beef, chopped onions, grated carrot, garlic, tomato paste, tinned tomatoes, oregano and beef stock. Then I divided the base in half and added cumin, chopped fresh chilli and red kidney beans to 1 half. I seasoned both halves with salt, pepper and sugar to taste.

Chicken wraps and salad
We had leftover roast chicken with mayonnaise in the wraps and a salad of spinach, grated carrot and chopped cucumber and apple on the side.

Breaded fish in rolls with baked beans and broccoli
These will be frozen breaded fish fillets from the supermarket!

Spaghetti bolognese
My husband will have gone back to work for 2 weeks on Tuesday, so there will be enough bolognese sauce left from Monday night to feed me and the kids another night.

Chicken fricassee
This is a family recipe that my Grandma and my Mum have cooked for as long as I can remember, so I want to try it out on my family. My family’s version (rather than the classic French dish) is leftover roast chicken, peas and sweetcorn in condensed cream of chicken and mushroom soup and served with rice. My Mum also adds roasted red peppers and sliced mushrooms.

Barramundi, mashed potato and vegetables
I season and pan-fry the Barramundi fillets. We’ll be having them with green beans as well as the mashed potato.
Food Prep and Baking
As I mentioned above, I roasted a large chicken on Sunday so that I would have chicken to use for more meals this week. I even had enough to experiment with making chicken sushi rolls today!
I baked coconut chocolate chip slice on Sunday for snacks.
I’ll make a batch of popcorn midweek for snacks.
I chopped a bagful of carrot sticks on Monday as usual!
We’ve just used the last of my homemade spreadable butter, so I’ll make a batch this week.
Right, I’m off to reheat the rest of the bolognese and put some pasta on to boil.
